Last week we picked the first grapes of the
year, a portion of our Pinot Noir for our
first sparkling wine ... a 'Blanc de Noir'.
We're very excited about this, I love
sparkling wine!

We ended up picking two tons. This should
make about 120 cases of wine.
We will be aiming for a beautiful golden
color with maybe just a hint of pink. The
Woodworth Blanc de Noir will be on the dry
side and we will be focused on preserving
the wonderful fruit flavors of the Pinot.

Grand Opening of the Wine Collective
We're coming up on the grand opening of
The Wine Collective. Cabinets
and fixtures are being installed and
it's begining to look like a great place
to be.

September 17, 5:30 - 7:30 is
the grand opening event for this
signature building sponsored by the City
of Temecula and the Chamber of Commerce.

Merlot...not quite ready

We've picked the Pinot Noir, now we need
to start watching to determine when the
Merlot, Chardonnay and Syrah are ready
to pick. It's a day by day thing. One
day it's too early and two days later,
you are rushing to pick. The determining
factor is the sugar level or 'brix' of
the fruit.
The Winemaker determines at what brix
level to pick. For our Blanc de Noir, we
picked at a brix of 20, for the rest of
our grapes, we will be waiting to pick
at a brix of 24. A refractometer is used
to measure the sugar level. For the
'science guys', here is a short video of
the process.
